Buds of the Da Bai tea cultivar are carefully handpicked in spring and allowed to dry in the sun or gently baked. The tea is then covered in freshly picked jasmine and allowed to infuse overnight. The dried jasmine flowers are removed and the process is repeated up to seven times to create an intense floral aroma.
To brew Western style, infuse about 2g (heaped teaspoon) of leaf per 300ml of 85c water for about 3 minutes. You can reinfuse up to 2 times by adding 60 seconds for every subsequent infusion.
To brew Gong fu style, infuse about 5g of leaf per 150ml of 85c water for about 5 seconds. You can reinfuse up to 5 times by adding about 5 seconds for every subsequent infusion.
