One of China's most revered and highly sought after teas is Da Hong Pao, also known as Empress Oolong, Rock Oolong, Wuyi Oolong and Big Red Robe Oolong. This tea is grown in the beautiful Wuyi mountains of Fujian Province, a nine peak mountain with vast rocky fingers pointing to the sky. The high altitude and rocky, fast draining terrain make it the only place to grow true Empress Oolong.
To brew strip-shaped Oolong tea Western style, infuse about 2g (heaped teaspoon) of leaf per 300ml of 95c water for about 1 and a half minutes. You can reinfuse up to 4 times by adding 30 seconds for every subsequent infusion.
To brew strip-shaped Oolong tea Gong fu style, infuse about 5g of leaf per 150ml of 95c water for about 10 seconds. You can reinfuse up to 6 times by adding about 5 seconds for every subsequent infusion.
