GREAT TASTE 2014 AWARD WINNING TEA
Yellow tea was formerly an exclusive tea for the Chinese Emperor but the method to create this tea was lost for hundreds of years and rediscovered in the 1970’s.
The leaves are processed like a green tea but then steamed and covered for them to ‘reabsorb their flavour’. This creates a light and soft brew with less grassiness than a green tea.
Directions:
To brew Western style, infuse about 2g (heaped teaspoon) of leaf per 300ml of 85c water for about 2 minutes. You can reinfuse up to 2 times by adding 60 seconds for every subsequent infusion.
To brew Gong fu style, infuse about 5g of leaf per 150ml of 85c water for about 5 seconds. You can reinfuse up to 5 times by adding about 5 seconds for every subsequent infusion.
