The Dong Ding Oolong is one of Taiwan's most famous teas and considered to be one of the finest in the world. Traditionally Dong Ding comes from Lugu in Nantou county but crop quality has dropped over the years. We use the finest high altitude Chin Xin oolong leaves from the revered Alishan mountain close by to Lugu. These leaves are far higher quality than the majority of Lugu crops. The leaves make a perfect Dong Ding which is then traditionally roasted dark to smoothen the finish and add complexity.

Dong Ding has become more of a style of producing tea rather than province (in a similar way to Beijing duck being made outside Beijing). We have created this amazing Dong Ding using the finest quality High Altitude Chin Xin Oolong leaves from the world revered Alishan mountain close by to Lugu. These tea leaves are far higher quality than the majority of Lugu crops. The tea is made in Dong Ding style and then roasted deep and dark to smoothen the finish and add intense complexity to the flavour.

The tea fills your nose, mouth and throat with dancing flavours from dark roasted to buttery to spicy and sweet. It is of exceptional quality and the finish is simply astounding. We do not know of any tea that has such a long and delicious finish as our Dong Ding. It charms your mouth for more than half an hour after drinking. This is a tea to savour when you want to treat yourself or your guests. A celebration of the perfection of tea.

Directions:

To brew ball-shaped Oolong tea Western style, infuse about 3.5g (heaped teaspoon) of leaf per 300ml of 95c water for about 2 minutes. You can reinfuse up to 5 times by adding 30 seconds for every subsequent infusion.

To brew ball-shaped Oolong tea Gong fu style, infuse about 8g of leaf per 150ml of 95c water for about 20 seconds. You can reinfuse up to 8 times by adding about 5 seconds for every subsequent infusion.
